Pizza would have to be one of my most favourite foods. I love biting into the crunchy base, topped with my favourite toppings and mouth watering flavours… But then my allergies kick in and I start to feel bloated from the dough and the excess cheese sends my sinuses into overdrive…

2 1/2 cups almond meal
1 cup tapioca flour
1 1/2 teaspoons baking powder
1 teaspoon sea salt
4 tablespoons coconut oil, melted
1/2 cup nut milk (or coconut water)
To make the paleo pizza base, preheat the oven to 180 degrees celcius. Line a large baking tray with baking paper. Combine the almond meal, tapioca flour, baking powder and salt in a large bowl. In a seperate bowl, whisk together the eggs, oil and nut milk.
Fold the egg mixture into the dry ingredients, one third at a time, and mix thoroughly to form a smooth, thick dough. Spoon the dough onto the prepared tray. using a palette knife, spread the dough out across the entire tray to a thickness of no more than 5mm (I like mine super thin, so try some different thicknesses until you find your ideal base.
Bake for 8mins until the pizza base is cooked through and lightly browned. Remove from the oven, flip and set aside to cool. Increase the oven to 220 degrees Celsius. Please note this recipe was first published in Pete Evans book Family Food.
Now this is where the real fun starts and I encourage you to add toppings that make your mouth water. Here is my list.
Pizza sauce (i also add a tablespoon of pesto as I find this doesn’t set of my allergies)
lightly fried zucchini
lightly fried pumpkin
Now for the cheese. So this really comes down to what you can tolerate. I finish my pizza off with grated halloumi, but I have also grated zucchini, used cashew cheese, or added a couple of dollops of a dairy free dip. All great tasty options!
Season with your favourite herbs, return to the oven and cook for a further 10mins, or until golden and crisp.
Remove from the oven, cut into portions and enjoy.
