As many of you know I became a vegetarian when I was 15, but I love cooking and the joy that comes from creating a wholesome meal that the whole family will enjoy. And although I have never consumed this slow cooked chicken casserole myself, don’t let that deter you. I always seek feedback from my husband re the flavours. Gauge from my kids what they really think. The responses to this meal were some of my best yet and included. Mum – this is the best meal you’ve ever cooked. It’s as good as Nanna’s cooking (not sure if I should be a little offended by this) and I got a 9/10 from my fussiest eater.
The other great thing about this recipe is that you only need one pan. I use a slow cooker, so you can throw everything in at once. Walk away and return in 4 or 8 hours knowing that you have a delicious meal ready to serve.
INGREDIENTS
Thickening the Gravy – If you prefer a thicken gravy then you can thicken by adding a slurry. In the last 30 mins of cooking, remove 1/2 a cup of the broth and mix together with 2tbsp of flour / corn flour. (add more flour depending on how thick you like it) Pour the mixture back into the slow cooker and stir. Cook on high for 30 mins to allow to thicken.
